EDINBURGH-BASED CHEF Dario Pacifici has cooked for the likes of Hugh Grant and U2, and now he wants to feed you… crocodile. Served with pork
crackling and baby quail, it’s one of the more eye-catching ingredients on the menu of his Creole-influenced The Voodoo Rooms. You might baulk at that,
but surely you can’t knock the Bourbon crème brûlée – and if someone has wronged you, then stab at a walnut cracker voodoo doll with a caramel spear.

Sushi. surprise


Jersey’s abundance of seafood is now leading the way for sushi and sashimi
restaurants. Sequestered away in the unlikely location of the Jersey Pottery
premises is a new sushi bar, overseen by sushi chef Richard Cicero Mico. The
freshest mackerel, prawns, octopi and scallops form the basis for his sashimi,
nigiri and gunkan. Corporate groups can even go into the kitchen and create
their own sushi, with Mico’s assistance, as a team-building exercise.

Chicago homecoming


Takashi Yagihashi, a Japanese chef with a French education, was lauded
in Chicago for his fusion menus before leaving to establish his hit
Las Vegas restaurant Okada. Now, he’s back with a new Chicago
restaurant for 2008. Organic ingredients dominate at the eponymous
Takashi, with more of his Japanese-French fusion. There’s also a sake
menu and local beers from Yagihashi’s other hometown, Ibaraki, Japan.
